The lecithin obtained from crude or dewaxed rice-bran oil consisted mainly of phosphatidylcholine, phosphatidylethanolamine, phosphatidylinositol, and triglycerides, along with carbohydrates, free fatty acid, sterols, and waxes. Because of its special qualities, rice bran lecithin has obtained a wide range of uses. it is used for treating memory disorders such as dementia and Alzheimer’s disease.
